All the game sold through Seamer Fayre is sourced locally. We do not buy through game dealers as we are passionate about maintaining the provenance of our food.
Venison is delivered ready gralloched into our cold store direct from the stalker, Paul, and will hang there for only a few days.
Because the meat is so lean, we break down the deer sooner rather than later, to retain the bloom and moisture within the meat. Consequently our roe venison is not too 'gamey', and is ideal for steaks and sausages, where other fruity flavours may be added without being overpowered by the flavour of the venison. We can supply the haunch as a whole, boned and rolled, or still on the bone, or as steaks. The loin is the choice part of the whole deer, and can be supplied as one piece, or as medallions, depending upon your recipe.
We also produce venison casserole steak, for stews and slow cooking, and venison, cranberry and apple sausages.
Our pigeon, pheasant and rabbit is sourced either on our own farm or from neighbouring farms.
