Because we farm a breed of sheep that can lamb all the year round, the vast majority of our lamb in the shop is 'spring' lamb, and consequently is very tender.
All the various cuts of lamb are available, and the butcher is able to do 'specials', such as crown roasts or saddles to order.
The usual season for mutton is October to March, but as it is our own, you can order it pretty much any time of the year.
Typically, leg of mutton, and diced mutton are most popular, and becoming more so, as foodies rediscover the deeper flavour that mutton brings.
